Multi Bean and Edamame Salad

INGREDIENTS:

  •  1× 15.5 oz can Garbanzo Beans, rinsed well
  • 1× 15.5 oz can Kidney Beans, rinsed well
  • 1× 15.5 oz can Black Beans, rinsed well
  • 1× 16 oz bag Frozen or Fresh Sweet Corn
  • 1× 10 oz bag Frozen or Fresh Shelled Edamame
  • 1 Red Bell Pepper, cored, cut in half, thinly sliced
  • 1 Small Bunch Scallions, thinly sliced
  • 1 bunch Cilantro, washed well and chopped
  • ½ cup Canola Oil
  • 1 Tbsp Red Wine Vinegar
  • 1 Tbsp Lime Juice
  • 4 cloves Garlic, minced
  • 1 tsp Kosher Salt
  • ½ tsp Black Pepper

DIRECTIONS:

Mix beans, corn, edamame, bell pepper, scallions, and cilantro in large bowl. In medium bowl combine oil, vinegar, lime juice, garlic, salt and pepper. Mix dressing of your choice with salad right before service.
