- 1lb ground chicken
- 1/3 cup oatmeal (I blended mine)
- 1 tablespoon olive oil
- 3 tablespoon buffalo sauce
- salt and pepper
- 1 clove garlic
- 1/2 onion
- 1 whole egg
- 1 stalk celery
- 1 cup shredded cheese (I used fat free)
Chop celery, onion and garlic and put in skillet with oil. Cook until tender. Next in a large mixing bowl combine egg, oatmeal, salt, pepper, buffalo sauce and cheese. Stir thoroughly. After stirring, add vegetables and stir some more. At this point add in ground chicken and stir until mixed. Take a baking sheet and line with tin foil (spray with non stick cooking spray) and then add chicken mixture. Shape into loaf of choice. Put into pre-heated oven at 350 degrees for 45 min. Let sit after cooking and then serve! Makes 4 servings, each serving has 254 calories, 33 grams protein, 8 grams carbs and 10 grams fat.
