Ingredients – thrown into a big bowl and blend them together:
1/2 cup of pea protein
1/4 cup of hulled hemp seeds 1 cup of egg whites
1/2 cup of canned pumpkin pure
1/8 cup of ground almonds
1/8 cup of coconut flour
1/2 cup of coconut milk
1tsp of baking powder
2tbsp of caraway seeds
1 tsp sea salt
I baked this for 20 minutes at 150 celcius, let it cool, and proceeded to Slice. I then made two little sandwiches with 10g of English Mature Cheddar inside each (England may not be the first place that comes to mind when asked ‘which country would you say has the best cuisine?’ but its sharp cheeses sure are fantastic) and grilled on a nonstick further nonsticked with coconut oil. C’est tout. The bread was a bit fragile as you can see in the pics but oh! it was so soft, the caraway seeds complimented the pumpkin so nicely, and the sharpness of the cheddar tied it all together beaaaautifully. All smiles over here, all smiles 😀 😀 😀
Each loaf yields 8 slices. Macros per half a loaf, i.e. 4 slices = 471kcals, 40g protein, 23g carbo, 18g fat and a gorgeous 22g fiber.
